Foeniculum vulgare 'Rubrum' (Apiaceae)
Billowing masses of feathery foliage are a wonderfully unique color — deep green with a prominent bronze-to-silvery-purple cast. Large, flat umbels of tiny mustard-yellow flowers sway in the summertime breeze atop upright plants, eventually yielding a profusion of seeds. Leaves can be used as a pot herb, adding color and anise-like flavor to salads and other dishes. Fennel is a favorite larval food source for Black Swallowtails, and provides height and softness in sunny butterfly gardens.
